DIY Ceasar Salad Dressing Mix
Summer is almost here and that means more grilling, more picnics, and more salads. Lots and lots of salads please!
Of course lots and lots of salads means we have to think about salad dressings too. This summer instead of reaching for my usual boring bottle of ranch dressing, I’ve decided to challenge myself to get a little better at making my own oil based vinaigrette dressings.
To start things off, I mixed up a batch of this Make Your Own Ceasar Salad Dressing Mix. It’s a little twist on the usual creamy ceasar dressings and instead mixes spices with oil and lemon juice. The ingredients can be quickly shaken together in a jar and it’s easy on the budget too.
Ceasar Salad Dressing Mix
6 Tbl grated parmesan
1 Tbl sugar
1 Tbl garlic powder
1 tsp onion powder
1 tsp salt
1 tsp white pepper
1 tsp dry mustard
Combine all ingredients and mix well. Store in a small covered container. Makes enough for 4 batches of dressing.
To use: In a jar with a tight fitting lid, combine 1/4 cup of the mix with a 1/2 cup of oil and a 1/4 cup of lemon juice. Put the lid on the jar and shake well to combine.
Slowly drizzle the dressing over your salad greens, mixing as you go, until you have the desired amount of dressing on your salad. Top your ceasar salad with grated parmesan cheese and croutons. (Click here to learn how to make your own croutons).
A cleaned-up recycled jar works great for shaking together this recipe (remember – you can take the labels off your recycled jars with your homemade Goo Gone!).
You can use regular vegetable oil and bottled lemon juice if that’s all you have in the house, or you can use the pricier extra virgin olive oil with freshly squeezed lemon juice. Two lemons will yield about 1/4 cup of the lemon juice that’s needed.
How long does the dry mix keep?
This dry mix should keep well for several months, and probably even up to a year.
