Back in the days before Cheez Whiz or other cheesy convenience items, my mother used to make this basic cheese sauce to serve over vegetables. Well, I shouldn’t really say “vegetables”. It was almost always used exclusively on cauliflower at our house and to this day I think that cauliflower must be served with lots of cheese or things just aren’t right with the world.
Some of you will recognize this recipe as a basic white sauce, with the addition of cheese. My mom always used slices of Kraft Old English cheese (do they even make that anymore?) She tore the cheese into little pieces that she would set aside to be ready to add to the sauce.& That was pretty tempting to a me as a little kid, and I remember always trying to snitch one of those bite sized pieces when she wasn’t looking. Nowadays, I just use shredded cheese from whatever bag I have in the house. *how boring*
A sauce like this really goes together much faster than you would think and is frugal way to whip up a cheese sauce from items you most likely have on hand.
Basic Cheese Sauce Recipe
1 Tablespoon Butter
1 Tablespoon Flour
1/2 cup Milk
1/2 cup Shredded Cheese
Place the butter in a small saucepan and melt over medium heat on the stove. Once the butter is melted, add the flour and stir well. Next add the milk and stir while cooking until smooth. Finally add the cheese and stir it in until it is melted and incorporated into the sauce. You can also add some salt and pepper for extra flavor.
Serve over cooked vegetables (cauliflower!!) or any other item needing some cheesy goodness.
