What’s a busy cook to do when a recipe calls for pumpkin pie spice and you don’t have it in your supply? Try substituting this handy mixture that uses spices you probably do have in your stash.
PUMPKIN PIE SPICE
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ground ginger
1/8 teaspoon ground cloves
Combine the above ingredients. This equals one teaspoon of pumpkin pie spice.
I had planned on using this pumpkin pie spice substitution when trying a a recipe for pumpkin chocolate chip cookies. There was a yummy sounding Pumpkin Chocolate Chip Cookie Recipe on the $5 Dinners website that I thought would be perfect for using up the rest of my homemade pumpkin puree.
I was busy mixing my ingredients – and then I screwed up. In the midst of some sort of brain fog, I added almost twice as much pumpkin to the recipe as I should have. Oops and darn it.
I made a few more adjustments and ended up with what I called my Accidental Pumpkin Bars. They were actually pretty good, but just a smidge too funky to share the recipe on the blog.
Oh well. I still had fun feeling smart and resourceful with my pumpkin pie spice substitution!
