Homemade Corn Muffin Mix {Jiffy Copycat}

But did you know it’s also quick and easy to make your own corn muffin mix? This homemade corn muffin mix recipe is equal in size to a store-bought box and makes a great DIY substitute.
How To Make Your Own Corn Muffin Mix
To make this handy corn muffin pantry mix, you’ll begin by mixing together the dry ingredients. You’ll combine 2/3 cup of flour with a ½ cup of cornmeal. Then you’ll mix in a ¼ cup of sugar, 2 teaspoons of baking powder, and a ½ teaspoon of salt. This will give you 1-1/2 cups of dry mix that can be used instead of a store-bought box. This size batch fits perfectly into a pint size mason jar too!
Making a Batch of Corn Muffins with your Homemade Mix
So now you have your DIY corn muffin mix substitute ready to go in your pantry. Here’s how to make that mix into corn muffins. And guess what? It’s just as easy as when you use a box of Jiffy!
Empty your homemade corn muffin mix into a bowl. Then stir in 2 tablespoons of melted butter (or melted coconut oil, or vegetable oil) along with 1 egg and a 1/3 cup of milk. Then fill your 6 muffin cups and bake at 400 degrees for 15 to 18 minutes.

- 1/2 cup yellow cornmeal
- 1/4 cup white sugar
- 2 teaspoons baking powder

Use the Mix:
- Stir into the dry ingredients, the melted butter along with the egg and milk. Stir just until ingredients are combined.
- Line a muffin pan with paper liners and fill about 2/3 full. This mix should give you 6 muffins
- Bake at 400 degrees for 15 to 18 muffins until lightly browned on the top. These muffins are best served warm right after baking them.
