This homemade corn muffin mix is an easy DIY substitute for a store-bought muffin mix. It makes 1-1/2 cups of mix and will give you six muffins just like the box of Jiffy.

Ingredients:
To Make The Mix
2/3cupflour
1/2cupyellow cornmeal
1/4cupwhite sugar
2teaspoonsbaking powder
1/2 teaspoonsalt
To Make The Muffins
1batchcorn muffin mix
2tablespoonsmelted butter (or vegetable oil)
1egg
1/3cupmilk
Instructions:
Make The Mix:
Stir together the flour, cornmeal, sugar, baking powder, and salt. Store in a covered container (a pint mason jar works well).
Use the Mix:
Stir into the dry ingredients, the melted butter along with the egg and milk. Stir just until ingredients are combined.
Line a muffin pan with paper liners and fill about 2/3 full. This mix should give you 6 muffins
Bake at 400 degrees for 15 to 18 muffins until lightly browned on the top. These muffins are best served warm right after baking them.
