Let’s Make Pancakes from Scratch

You can make delicious pancakes from scratch without much more effort than it takes to use premade pancake mix. This recipe uses the most basic ingredients (flour, baking soda, milk, etc.) that tend to always be on hand in our homes.

It was frustrating when I wanted to make pancakes, but had no pancake mix or baking mix in the house. I would stand in the kitchen, knowing I was surrounded by all the ingredients I needed, without any idea how to mix them into a pancake batter. That’s why I believe increasing your collection of scratch recipes really leads to a new kind of convenience. It gives you the power to use ingredients you have on hand, rather than always being dependent on the premixed versions.

Here is the recipe for a basic pancake mix. I only use whole wheat flour when I make this recipe now and find that it makes a very hearty and tasty pancake. I have a small household so this is my “cut-in-half” version. Simply double the recipe if you want a batch that makes 12 to 14 pancakes.

BASIC PANCAKE MIX

3/4 cup Flour (either white or whole wheat)
1 Tablespoon Sugar
1 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1/4 teaspoon Salt
3/4 cup Milk
1 Egg

Combine the flour, sugar, baking powder, baking soda, and salt. Add the milk and the egg and stir until combined. You can use more or less milk depending on how thick or thin you like your pancake batter.

Grease and heat a skillet, griddle, or electric fry pan. Once the pan is heated (flick a few drops of water on it and see if it sizzles), pour the pancake batter onto the pan in circles the size of the pancakes you would like. Let the batter sit until bubbles form on the top. It doesn’t take long, just a minute or two. Then flip the pancakes over and heat for another minute or two until done. Transfer to a plate and cover with a clean dish towel to keep them warm while you are making the rest of the pancakes. This recipe makes approximately 6 to 8 pancakes. Serve with butter and syrup.

Chocolate Version: For a fun switch try these chocolate pancakes. Use the same recipe as above but increase the sugar to 1/4 cup, and add 2 Tablespoons cocoa powder and 1/2 teaspoon nutmeg. These are good with a fruity syrup such as strawberry.

  1. Change the milk to a scant 1/3 cup dry powdered milk, and you can mix it up in batches and store in a zippered bag. When you are ready for pancakes just add an egg and some water! Ta-da!!
