Homemade Pancake Mix

Pancakes are a simple meal that even beginner cooks can easily whip up. And just as easy as making the pancakes themselves, is making a homemade pancake mix from scratch. In fact an easy homemade pancake mix comes together so quickly that it’s rather a shame that pancake mixes were ever brought to the market in the first place, making all of us think it’s more complicated than it really is.

I first created this homemade pancake mix when I wanted to give it as a gift with a cute little jug of pure maple syrup.  I found that if I quadrupled the dry ingredients in the recipe I had been using to make my own pancakes from scratch, the resulting mixture fit perfectly into a quart sized canning jar. Not only was this a nice result for gift giving, it’s a handy bonus for just storing the pancake mix in your own pantry too!

I also decided to do a mixture of whole wheat flour and all purpose flour for this mix (although you could do it with just All Purpose flour if you wish). Here’s a quick look at all the ingredients in this pancake mix and as you can see, they are very common pantry items:

Homemade Pancake Mix Ingredients:
2 cups Whole Wheat Flour
1 cup All Purpose Flour
1/4 cup White Sugar
4 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt

Once all those ingredients are whisked together, you can transfer the mixture to a jar for storage. I like to use a wide mouth quart canning jar with a screw-on canning jar lid. I like to also use my canning jar funnel to help with this job.

Using Your Homemade Pancake Mix

When it comes to time to use this pancake mix, all you need to do is measure out ¾ cup of the mix and add some milk and an egg. You’ll need to add about ½ cup to a ¾ cup of milk depending on how thick or thin you prefer your pancake batter.

One of these batches will make about 6 to 8 pancakes, and your pancake jar mix will make four batches.

Homemade Pancake Mix

A jar of this homemade pancake mix stirs together quickly and is a great money-saver to keep in the pantry too. A batch fits perfectly into a quart canning jar and can also be an easy food gift!

Ingredients:

  • 2 cups Whole Wheat Flour
  • 1 cup All Purpose Flour
  • 1/4 cup White Sugar
  • 4 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt

Instructions:

  • Mix together all the ingredients.
  • Transfer to a storage jar with a lid (a quart canning jar works well).
  • To make a batch of pancakes combine: 3/4 cup of the mix with 1 egg and 1/2 cup to 3/4 cup of milk (depending on how thick or thin you prefer your pancake batter). A batch will make 6 to 8 pancakes and the mix is a 4-batch size.

Notes:

This mix can also be made with 3 cups of all purpose flour.

    1. A simple vegan substitute you can use is to mix 1 tablespoon of ground (or milled) flax seed with 2-1/2 tablespoons of water for each egg you want to replace. Let the flax/water mixture sit for about 5 minutes before using so that it becomes a bit thicker.

  1. I made these today and they were yummy! I have made pancakes many times but not recently & I could not find my recipe. I do have this question: Was it intentional leaving oil/butter out of the batter? I added 1 TBSP oil to my batter. Thanks! I love the ratio of white to whole wheat flour:)

    1. It’s correct that there is no oil or butter in this recipe. The milk and eggs make the batter moist and they turn out good!
