Ingredients:
1½cupsFlour
½tspBaking Powder
½tspBaking Soda
¼tspSalt
½cupButter (1 stick)
½cupPeanut Butter
½cupWhite Sugar
½cupBrown Sugar
1Egg
1tspVanilla Extract
1BagMini Snickers Candy Bars (you will need about 30 candy bars)
Chocolate Glaze:
½cupPowdered (confectioners) Sugar
1TblCocoa Powder
1 - 2 Tbl Milk
Instructions:
Mix together the flour, baking powder, baking soda, and salt in a medium mixing bowl and set aside.
In a large mixing bowl, beat together the butter, peanut butter, and sugars. Then beat in the egg and vanilla.
Gradually beat in the dry ingredients, mixing until everything is well combined.
To form the cookies, flatten about a tablespoon of the dough and place an wrapped mini Snickers on top. Then shape the dough around the candy bar forming a ball with the candy bar inside. You want enough dough to completely cover the candy bar, but not too thickly. Then place on ungreased cookie sheets.
Bake at 350 degrees for 10 to 12 minutes.
Remove from oven and let cool.
To make the chocolate glaze, mix together the powdered sugar and the cocoa powder. Add in a tablespoon of milk and stir to make the glaze, adding additional small amounts of milk if needed to make the glaze a drizzling consistency.
Place the cooled cookies onto waxed paper and drizzle a bit of the chocolate glaze on each cookie. The glaze will harden as the cookies sit.
Notes:
You will need about 30 mini Snickers bars for this recipe. The size of the bags available can change as the years go along, however my most recently purchased bag was a 9.7 oz size which contained 33 candy bars.
