This potato soup mix stirs together quickly and works great as a pantry staple or as a frugal gift. To make a bowl of soup you just need to boil some water and stir in the mix.

Ingredients:
1¾cupsinstant potato flakes
1½cupsinstant dry milk powder
3teaspoonschicken bouillon powder
2teaspoonsdried minced onion
½teaspooncelery salt
¼teaspoonwhite pepper
¼teaspoondried thyme
⅛teaspoonturmeric
1teaspoondried parsley flakes
1tablespoondried chives
Instructions:
Stir together all the ingredients except the dried parsley and chives.
Place the mixture into a food processor and process until the mixture is more powdery.
Stir in the dried parsley and dried chives (doing this after processing gives the mixture some flecks of color)
Store the mixture in a jar with a tight fitting lid.
To make the soup: Boil one cup of water and then stir in 1/4 cup of the soup mix.
Notes:
If you do not run the mixture through the food processor, use 1/2 cup of the mix when making a bowl of soup.To make a vegan option: Substitute soymilk powder for the dry milk powder, substitute a couple cubes of vegetable bouillon for the chicken bouillon, and add a couple tablespoons of nutritional yeast. Add any additional salt & pepper to the prepared bowl of soup as needed.
