Ingredients:
2BagsDark Chocolate Chips (10 oz)
1/2tspAlmond Extract
1/2cupDried Cranberries
1/4cupSliced Almonds
1/4cupShelled Pistachios (lightly chopped)
Coarse Salt (optional)
Instructions:
Line a rimmed baking sheet with parchment paper and set aside.
Place the dark chocolate chips in a microwave safe bowl. Heat in the microwave until melted. I did one minute, stir, 30 seconds, stir, and then another 30 seconds, with a final stirring to get things smoothly mixed together.
Add the almond extract and stir to mix it into the melted chocolate.
Spread the melted chocolate over the parchment paper on the baking sheet.
Sprinkle the dried cranberries and nuts over the melted chocolate, pressing them in lightly. You may find that you are happy with how the bark is covered without having to use the full amounts of nuts and cranberries. (see note below).
If you would like a salted version, sprinkle a bit of coarse salt over the chocolate too.
Place in the refrigerator for about an hour so the chocolate can harden.
Once the mixture has hardened, break or cut into pieces.
Notes:
I did not use the full amounts of the cranberries and nuts on my batch, however I listed those amounts because that will certainly give you enough for sprinkling on as much as you wish. You can also try this recipe with different combos of dried fruit and nuts.
