Ingredients:
⅔cupuncooked rice
1⅓cupswater or broth (or a combination)
1tablespoonolive oil
½cupdiced onion
½cupdiced green pepper
1teaspoonminced garlic
1½cupssliced sausage or kielbasa(I use 1/2 a 13 oz pkg of Hillshire Farm)
1candiced tomatoes (14.5 oz)
1½teaspooncajun seasoning blend
Instructions:
Bring the water and/or broth to a boil in a saucepan on the stove. Add the rice, stir, turn the heat to low, and cover. Simmer for 20 minutes to let the rice absorb the liquid.
While the rice is simmering, begin cooking the other ingredients. Place the oil in a large skillet and heat on the stove. Then add the diced onion, diced green pepper, minced garlic and saute for 3 to 5 minutes.
Add the meat and saute for another 3 to 5 minutes.
Add the the can of tomatoes (undrained) to the skillet.
When the rice is done cooking, add the rice to the skillet and stir to mix everything together.
Finally add the cajun seasoning. Let everything simmer for a few minutes to let the flavors meld.
