Not only do these bars have the goodness of oats and brown sugar, they can be made with different flavors of jam to help you use up what you may already have on hand.

Ingredients:
1cupflour
3/4cupquick oats
1/2tspbaking soda
1/2tspcinnamon
1/4tspsalt
1/2cupbrown sugar (lightly packed)
1/2cupwalnut pieces
8tblbutter - melted(1/2 cup)
3/4cupjam(see notes)
1/4cupchocolate chips - optional
Instructions:
Preheat oven to 350 degrees.
In a medium mixing bowl, mix together the dry ingredients (the flour, oats, baking soda, cinnamon, salt, brown sugar, and walnuts).
Add the melted butter and stir together until the mixture has a crumbly texture.
Reserve 3/4 cup of this mixture for the topping. Pat the rest of the mixture into a greased 8x8 baking pan.
Spread the jam over the layer already in the pan. You can also sprinkle on a few chocolate chips at this point if you wish.
Sprinkle the remaining 3/4 cup of crumbs over top of the jam.
Bake for 25 minutes or until the jam is a little bubbly around the edges.
Notes:
Raspberry or strawberry jam are good choices for these bars, but many other flavors of jam can work just as well too.3/4 cup of jam works well for these bars, but I've also made them with a little more or a little less jam depending on what I have on hand.You can also sprinkle a few chocolate chips over the jam if you think it would be a good addition with the flavor of jam you are using. I like to use the mini chips.
