This simple and handy make-ahead mixture will speed up the process of making healthy homemade energy bites. The recipe creates about 7 cups of dry mix and is enough to make 4 batches of energy bites. You can also use the mix to make three different flavors of energy bites.

Ingredients:
4cupsquick oats
1½cupsground flax seed
2½cupsunsweetened coconut flakes
To make the energy snack bites, use the following:
½cuppeanut butter
⅓cuphoney
1teaspoonvanilla extract
1¾cupsenergy bites mix
Add-ins for different flavor options:
¼cupcocoa powder for a chocolate version
⅓cupmini chips for a chip version
⅓cupgolden raisins for a dried fruit version
Instructions:
Combine the oats, flax seed, and coconut flakes in a large mixing bowl.
Store the mixture in a covered container until ready to use. (I store mine in two quart size mason jars)
To make a batch of energy bites combine the peanut butter, honey, and vanilla extract in a mixing bowl and then stir in the 1-3/4 cups of the dry mix.
Decide which flavor of energy bites you would like to make (chocolate version, chip version, or dried fruit version) by stirring in one of the flavor add-ins.
Then roll the mixture in small balls. Each batch should make about 20 energy bites.
