This simple two ingredient mixture lets you enjoy a blueberry syrup topping on your pancakes or waffles without all the calories or sugar by using a quick combo of berries and juice that heats up in just a couple of minutes. If you'd like a little extra sweetness, a bit of pure maple syrup or agave syrup can be stirred in as well.

1cupBlueberries (either fresh or frozen)
1TblPure Maple Syrup or Agave Syrup (optional)
Combine the blueberries and apple juice in a small saucepan.
Heat on the stove until the liquid is just starting to bubble up to come to a boil.
Remove from the heat and mash the blueberries a bit with a fork to help make the mixture a little thicker.
Put a lid on the saucepan and let the syrup mixture rest for a few minutes which will help it thicken up just a bit more too.
This recipe will make about a 1/2 cup of syrup topping that can be served over pancakes, waffles, or french toast.
