This comforting chili can be made ahead of time in the crockpot and is a welcome dinner to come home to on a cold day. It gives you plenty of healthy vegetables, and can be a great way to use up odds and ends of fresh vegetables too.

Ingredients:
2cans Diced Tomatoes (14.5 oz size, undrained)
1canChili Mix Beans (15 oz size, undrained)
1Zucchini - Sliced
Half of aGreen Pepper - Diced
Half of aSmall Onion - Diced
Handful ofBaby Carrots - Sliced
2tspChili Powder
2tspDried Oregano
1/2tspCumin
1tspMinced Garlic (fresh or jarred)
1/2tspSalt
Instructions:
Combine the diced tomatoes, beans, and your chopped vegetables in a crockpot.
Add the spices and mix well.
Cook on low for 6 - 8 hours, or on high 3 - 4 hours.
