Coconut Oatmeal Cookies
A soft and tasty cookie that blends the rich flavors of oats, brown sugar, and flaked coconut.
Quick Cook Oats
(I use unsweetened)
Butter or Margarine - softened
Combine the oats, flour, baking soda, salt, and coconut flakes in a medium size bowl and set aside.
In a large size mixing bowl, cream together the butter, brown sugar, eggs, and vanilla.
Gradually add the dry ingredients to the butter/sugar mixture until well mixed together. Stir in the nuts if using.
Drop by spoonfuls onto cookie sheet.
Bake at 350 degrees for 10 minutes.
Remove from oven and let the cookies rest on the sheet for a minute or two. Then transfer the cookies to lay on a wire rack or piece of paper toweling to finish cooling.
