A simple homemade version of the Chocolate Coconut Chew Larabar that you can quickly whip up in the food processor and then form into bite-sized balls for easy snacking.

Ingredients:
1cup (packed)Medjool Dates
3/4cupMix of Almonds and Walnuts
2TablespoonsUnsweetened Cocoa Powder
1/2cupUnsweetened Coconut Flakes
Instructions:
Begin by soaking the dates in warm water for about 15 minutes to soften them for processing in the food processor.
Put the nuts into your food processor first and process them until they are coarse crumbs.
Discard the soaking water from the dates, and then add the dates to the food processor and mix together with the nuts until the mixture starts coming together.
Next add the cocoa powder to the food processor and mix until combined.
Finally, add in the coconut flakes and pulse until incorporated into the mixture.
Remove the mixture from the food processor and place into a small bowl.
Roll the mixture into 1" balls. If the mixture is not holding together, you can add a tablespoon or two of water to moisten the mixture.
Store in a covered container.
Notes:
I always use half of a 12 oz package of dates. This equals about 1 cup of dates packed into the measuring cup. Depending on the size of your dates, it will probably be somewhere between 10 to 15 medjool dates that you use in this recipe. You can also substitute regular dates in this recipe to equal 1 cup.
