These simple and healthy energy bites have the falls flavors of pumpkin and cinnamon, but they're perfect any time of the year you need a healthy snack!

1½cupsOats (I use quick oats)
⅓cupGround Flax Seed
½tspGround Cinnamon
¼tspAllspice
Pinch ofSalt
2TblChocolate Mini Chips
Wet Ingredients
½cupPeanut Butter
⅓cupHoney
⅓cupCanned Pumpkin
1tspVanilla Extract
Instructions:
Combine all the dry ingredients in a small bowl and set aside (the oats, flax, cinnamon, allspice, salt, and mini chips).
In a larger mixing bowl, combine the wet ingredients (the peanut butter, honey, pumpkin, and vanilla).
Add the dry ingredients into the wet ingredients and stir until well mixed together.
Once the mixture is stirred together, I usually refrigerate it for about 10 to 15 minutes so that the mixture is a little easier to work with in the next step.
To make the bites, take a small amount of the mixture and roll it between the palms of your hands to create a ball that's about 1" in size. There should be enough mixture to make about 25 balls.
Store the completed balls in a covered container. They can be kept at room temperature, however you may find that they will keep a little longer if they are refrigerated.
Notes:
Leftover pumpkin from the 15 oz can of pumpkin can be transferred to freezer bags or containers and put in the freezer to use later.
