Almond “Brownie” Bars

These Almond "Brownie" bars are moist, delicious, and quick and easy to make too! Almond extract gives the boost of flavor that makes this bars special.

Are they brownies? or blondies?  Or just bars?

I’m never sure what to call these tasty little homemade treats, but I’ve kind of settled on calling them brownies even though they are not in any way brown.  The final texture of these bars and the ingredients used most resemble a brownie recipe, just minus the chocolate.

And that’s why these “brownies” are a nice change of pace.  The almond flavoring is a nice switch from the usual cocoa powder and chocolate and creates a grown-up flavor that goes great with a cup of coffee or tea.

Another bonus for this recipe is it uses ingredients that I usually have around that house so I sometimes whip them up when I need to bake something with what I have on hand.

I first had these almond brownie bars several years ago when a friend brought them to a group camping weekend.  They were perfect for sharing, didn’t create any messy chocolate fingers, and I loved the taste! She later shared the recipe in a cookbook our church put together and I’ve been making them ever since.

Here’s how to do it:

Almond “Brownie” Bars

Ingredients:

  • 4 Eggs – beaten
  • 2 cups White Sugar
  • 1/4 teaspoon Salt
  • 1 Cup Butter – Melted
  • 2 teaspoons Almond Extract
  • 2 cups Flour
  • Slivered Almonds – optional

In a large mixing bowl, combine the beaten eggs, sugar, and salt.  Then stir in the melted butter, almond extract, and the flour until just mixed.

Pour into a greased 9×13.

Sprinkle another teaspoon or two of sugar over the top.  You can also sprinkle some sliced almonds over the top too.

Bake at 350 degrees for 25 minutes.

  1. I love these grown-up bars. Made them for Christmas and they were a big hit. Several people wanted the recipe. I topped it with slivered almonds the first time I made it but went with sliced almonds the next time. I liked it better with the sliced almonds, and I think a drizzle of icing would be good also. No matter how you top them, these “Brownies” are just delicious!

  2. I learned a similar recipe (minus the almonds), and it was called “Blondies”. The main difference from yours was that it called for brown sugar, which for me was flavor enough 🙂

    1. You’re right Dee – If these had brown sugar they would be more like a true “blondie”. That’s why these bars seem so much more like brownies, but not brown!
