Coconut Oatmeal Cookies

When it comes to homemade sweet treats, cookies are always a dependable choice that people of all ages can enjoy whether it’s the kids snacking on cookies and milk, or grownups having cookies with their tea or coffee. Almost everyone loves a cookie!

I’ve also learned that the Coconut Oatmeal cookie recipe I’m sharing today is always a winner that all ages enjoy too. At first look it might not seem like an exciting list of ingredients, but the final result is a soft, rich, delicious cookie. Yes, even without chocolate chips everyone likes them. 🙂

Coconut Oatmeal Cookie Recipe

This is also a recipe that has ingredients that I almost always have in the pantry. I keep plenty of oats around because every day I eat my favorite morning oatmeal. I also always keep coconut flakes in my pantry because I use them in my homemade snack bites that I make almost every week.

And I’ve always thought that because this recipe uses all brown sugar (no white sugar), it gives the cookies a rich flavor profile too.

I’m sure a stand mixer or an electric mixer would be helpful for this recipe too, but there are plenty of times I just mix these up by hand in my mixing bowl. Sometimes I still prefer the low-tech methods when I cook or bake and find it to be more quiet and peaceful than so many of our modern noisy appliances. Plus there’s less to clean up when you’re done!

Recipe for homemade coconut oatmeal cookies

This coconut oatmeal cookie recipe has been in my recipe box for many years and I’ve found it to be a good basic cookie that I can always rely on. It’s not too sweet, not too fancy, and not too messy. It’s just a delicious cookie with great flavor that people of all ages love to eat.

Here’s how to do it:

A soft and tasty cookie that blends the rich flavors of oats, brown sugar, and flaked coconut.

Ingredients:

  • 2 cups Quick Cook Oats
  • 2 cups Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Coconut Flakes (I use unsweetened)
  • 1 cup Butter or Margarine – softened
  • 1-3/4 cup Brown Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1/2 cup Chopped Walnuts (optional)

Instructions:

  • Combine the oats, flour, baking soda, salt, and coconut flakes in a medium size bowl and set aside.
  • In a large size mixing bowl, cream together the butter, brown sugar, eggs, and vanilla.
  • Gradually add the dry ingredients to the butter/sugar mixture until well mixed together. Stir in the nuts if using.
  • Drop by spoonfuls onto cookie sheet.
  • Bake at 350 degrees for 10 minutes.
  • Remove from oven and let the cookies rest on the sheet for a minute or two.  Then transfer the cookies to lay on a wire rack or piece of paper toweling to finish cooling.

  4. These are delicious cookies and so easy! Just out of the oven, my husband swooped in and ate one, rolling his eyes in pleasure! They may not last long, they’re wonderfully chewy, sweet, and oh yes, I had to leave out the nuts, but we never missed them. Will definitely make again.

  5. First time to use this recipe. I don’t know if I did something wrong but the cookies came out as flat thin cookies. I used 1 cup of butter but I think that was way to much butter. Has anyone else had that problem ?

  6. I don’t usually comment on recipes I have made from Pinterest but…these cookies are hands down the best I have ever made/eaten. Did not add nuts but did add about 1/2 cup white chocolate chips (needed to use them up). These cookies are so addictive I can’t stay away from the cookie jar. Be sure to observe the 10 minute cook time. It is perfect.

    1. I think you probably could make that substitution, but any flour substitution can potentially make for a denser or lighter cookie than the original.

  7. Made these for the first time tonight. Left out the nuts as my grandchildren don’t care for them. They are delicious!! May add some mini semi sweet chocolate chips next time.

  8. This recipe is absolutely yummy, and I can also speak highly for the variation that substitutes shaved almonds for the walnuts plus adds a cup of mini chocolate chips 🙂
