One Muffin Mix – Endless Possibilities!
Tired of cold cereal for breakfast? Me too. How about some delicious homemade muffins – and maybe some fresh fruit, and juice too? *Yum – that’s better *
To help you whip up some frugal homemade muffins a little faster, try this master Muffin Mix. It makes a pretty large mixture (enough for 4 batches that will yield at least a dozen muffins each) and it can be made in lots of different flavors and variations.
Warning – I substituted a couple cups of whole wheat flour for the white flour the first time I made this mixture, but did not get good results. Whole wheat flour made a much denser muffin (OK, they were kind of like bricks). The white all purpose flour really does make a lighter and fluffier muffin.
I also love the touch of cinnamon and nutmeg in this recipe. You get the most delightful spicy scent as you’re stirring your batter together and it gives a little boost to the flavor of the muffins without being too overpowering.
Master Muffin Mix Recipe
( Based on the Taste of Home All Star Muffin Mix )
Ingredients:
8 cups All Purpose Flour
3 cups Sugar
3 Tbl Baking Powder
2 tsp Salt
2 tsp Ground Cinnamon
2 tsp Ground Nutmeg
Combine the above ingredients and store in an airtight container. This will make 11 cups or enough for 4 batches of muffins.
To make the muffins:
Measure out 2-3/4 cups of the muffin mix into a mixing bowl. Stir in just until moistened the following:
- 1 egg
- 1 cup milk
- 1/2 cup butter (1 stick) – melted
Next stir in any Add-In’s you are using such as fruits or nuts (see flavor variation ideas below).
Put paper liners in a cupcake tin and fill each cup 3/4 full with batter. Bake at 400 degrees for approximately 20 minutes. You should be able to get about 12 to 18 muffins in a batch.
Flavor Variations for the Master Muffin Mix
So far I have made the following flavors with good results:
Blueberry – Add 1 cup of blueberries
Cranberry/Pecan – Add 1 cup dried sweetened cranberries and 1/2 cup chopped pecans
A few more flavor ideas I still want to try are:
Banana – Add 1 cup mashed banana
Carrot/Raisin – Add 3/4 cup shredded carrots and 1/3 cup golden raisins
Apple/Cheese – Add 1/2 cup shredded peeled apple and 1/2 cup shredded cheese
And still a few more . . .
Apricot/Cherry – Add 1/2 cup chopped dried apricots and 1/2 cup dried cherries
Cappuccino – Add 1 cup mini chocolate chips and 2 teaspoons instant coffee granules
Rhubarb/Orange – Add 3/4 cup diced rhubarb and 1/3 cup orange marmalade
And if we put on our thinking caps we can probably come up with some more ideas . . .
Maybe Strawberry/Walnut or Raspberry/Chocolate Chip ?

LOL! I thought this was a mix for making JUST ONE muffin in the morning! Ha ha ha!
Well I guess I did say “one muffin mix” Ha! Sometimes I would just like to make about 6 muffins at a a time though instead of a dozen. But I do need to make more than one 🙂
For 6, you could just make 1/2 the recipe!
I thought about that but was unsure about the “1 egg” used to make a dozen muffins. Wasn’t quite sure if I should try to use half the egg, or just use one egg and see what happened. I’ll have to experiment and find out.
